As we ease into peak summer produce, my attention is drawn to dishes that can be prepared quickly and with minimal effort. We can make fussy things later in the season, but for now, I'm keeping things simple.
This is a salad for peak summer. It has a short list of ingredients and makes the most of what's at hand. The main ingredients are peaches and cucumbers – perhaps a surprising combination. But each of these ingredients takes on the other flavors of lime, shallot, sesame, and chili so nicely that once you've had a bite, you'll wonder why we don't eat our cucumbers with peaches all the time.
I made the first version of this salad in about 10 minutes flat just before hurrying off to a summer potluck where it received glowing reviews. Another time, I threw the salad together right before a dinner that needed another element. It was perfect there, too.
