At last: A proper snow day! Yesterday, for the first time in two years, we got measurable snow here in Charlottesville. As the snow fell last night, we enjoyed this skillet lasagna. It was an ideal meal for a snowy night, feeling special but also not taking too much time to actually make. My skillet lasagna features sautéed spinach, a quick marinara sauce, tender-crisp noodles, pillowy pockets of ricotta, and a melty, golden mozzarella top.
It’s not quite the same thing as a lasagna that you might spend hours making, but it is a delicious meal for busy nights. With lots of room for shortcuts and variations, you can also make it yours.
