Here are four vegetarian dinners suited to this spring moment (chilly nights, the natural world slowly turning green). They also the fulfill the need for relatively hassle free dinners. Below that, I have a link to the April produce guide featuring local strawberries and grocery store asparagus as a stand in for the real deal asparagus that’ll be here in a couple weeks.

I almost walked by the fruit stand. Then I saw the strawberries and had to actively try not to freak out. Once home, I rinsed the berries and ate them right there over the sink. I’m working on a few only slightly more complicated strawberry things for Monday’s recipe post, but until then, you’ll find some of my favorite recipes in the April guide. There’s also good stuff like hakurei turnips, tender kale, and asparagus. Get the April produce guide on BkS.
